Got a barbecue coming up? Try this pineapple salsa

Memorial Day weekend is coming up people. If you need a foolproof dish to make for a crowd, throw some chicken or pork on the grill, baste it with some barbecue sauce and serve this salsa on the side. It’s beautiful to look at and even better to eat.

You cannot go wrong with this sweet and savory pineapple salsa. You just can’t.

(Also, it’s super easy.)

This is also great as a dip with chips. If you add some red salsa to it and stir, it becomes a super yummy chip and dip appetizer!

Pineapple Salsa
Fresh limes only! The little kick of jalapeno is nice in this.

1 cup pineapple, diced
1 cup peppers, diced (any combination of red, orange, yellow or green peppers)
1 cup Roma tomatoes, diced
1/3 cup cilantro, chopped
1/4 cup onion, diced
2 limes
Salt and Pepper
Optional: 1 jalapeno, seeded and diced

Combine all ingredients. For best taste, refrigerate for at least two hours to let flavors combine.

Makes about 3 1/2 cups salsa.
