Fresh and easy summer dinner: Chicken bruschetta pasta salad

Each summer my kiddos plant a tomato plant at their grandma’s house. Every time they burst through the door they run to the back deck to see if any “tomaters” are ripe for pickin’. This time of year they are delighted because there are tons of ripe, juicy ones just waiting for little hands to pluck off the vine.

Which leaves mama with two tons of tomatoes to use. Quickly.

This is the perfect salad for tomaters, and bonus — it doubles as a one-bowl, no-cook, complete meal. Protein, starch,, veggies and fat all wrapped up in one perfect package. (Extra bonus because it’s beautiful to look at!)

It’s also fresh and delicious and is the perfect thing to have for leftovers the next day!

Chicken bruschetta pasta salad_1

Chicken Bruschetta Pasta Salad

2 cups chopped tomatoes
3 green onions, chopped
1-2 cloves garlic, minced
1 bunch basil, chopped
1 tbsp olive oil
2 – 4 tsp balsamic vinegar (to your taste)
1/3 cup shredded parmesan cheese
salt & fresh ground pepper to taste
3 cups cooked pasta

Combine the tomatoes, green onions, garlic, chopped basil, olive oil, balsamic vinegar and parmesan in a medium bowl. Let sit for at least 15 min (up to overnight).
Toss the tomato mixture with the cooked noodles. Season with salt and fresh ground pepper. Can serve warm or cold!
