What’s better than a good chopped salad? Not much. When everything is already chopped up into bite size pieces and ready to go, it just makes it so fun and easy to eat. Every time I go to Paradise Bakery I always order their Asian chicken chopped salad. Making your favorite restaurant dish at home is always a good time, and this one is a fun one. You’ll be surprised at how easy this recipe is to make at home, too.

The ingredients are simple and since it’s a salad, there’s not much measuring. Just chop, dress, toss and serve. So so easy.

Here’s what you’ll need:

Ingredients:
carrots, chopped julienne style
edamame, found in the freezer section
crunchy chow mein noodles
green cabbage, chopped into strips
chicken, grilled and shredded
iceberg lettuce, chopped and washed
Asian dressing (I like Simply Dressed Ginger Sesame dressing)

Instructions:
Just toss the chopped iceberg with the dressing and top it with all the other ingredients. I love the presentation of all the ingredients lined up on a platter like this. If you plan to serve this with friends, this would be a fun way to serve it. It also makes it easy for everyone to customize this way. Don’t like edamame? Just skip it.

Next time you are at the store, you’ll have to pick up everything for this salad. It makes a great lunch or a light dinner in the Summer.
